Simple and Delicious Oven-Baked Pork Ribs for Two

It’s Friday night, and you want to spend a quiet evening at home, just the two of you. You’re hungry but tired too, so you want to prepare something that’s easy but also tasty and fulfilling. Cook these baby back ribs low and slow for a succulent, tender plate of ribs. They’re perfect because they require so little time to prepare. And if expediency is the goal, you can purchase store-bought barbecue sauce to shorten your prep time even more. It’s that easy. Plan on your prep time being five minutes; cook time should be about three hours, and count on a smooth and easy preparation that will serve two people adequately.

Ingredients:
• 1lb baby back pork ribs
• 1 tbsp cumin
• 1 tbsp smoked paprika
• 1 tsp cayenne pepper
• 4 tbsp ketchup
• 2 tbsp light brown soft sugar
• 2 tbsp Worcestershire sauce
• 1 tbsp apple cider vinegar
• 1 tsp garlic powder
• Dash of hot sauce (optional)

Recipe:
1. Heat the oven to 250 degrees Fahrenheit. Use a small sharp knife to remove any white membrane from the ribs, being careful not to cut the flesh, then put on a baking tray.
2. Combine the cumin, paprika, and cayenne in a small bowl with a big pinch of salt, then rub all over the ribs.
3. Add three tablespoons of water to the tray, cover tightly with foil, and bake for three hours until the meat is falling off the bone.
4. When the ribs are nearly done, combine the remaining ingredients in a small pan and bring to a simmer. Cook for one to two minutes until combined and reduced slightly.
5. Brush sauce all over the ribs and bake again, uncovered, for 10 minutes until sticky. Serve straightaway.

Alternatives:
• Use store-bought barbecue sauce instead of making your own for even quicker prep time.
• To cook on a barbecue, follow the instructions to the end of Step 1, then baste with the sauce.
• Finish cooking the ribs on a hot barbecue instead of returning to the oven for an extra smoky taste.

Serve with a baked potato or crispy French fries and a fabulous American salad with tomatoes, red onions, and mixed greens with the dressing of your choice. Dinner, as they say, is served.
